Ingredients:

  • Drippings from roasted turkey
  • ½ cup all-purpose flour
  • 4 cups low-sodium chicken broth (or turkey or vegetable broth)
  • Salt and pepper, to taste
  • Giblets and neck of uncooked turkey (optional)

Instructions:

  1. Simmer giblets and neck in water for an hour until cooked. Remove and reserve the giblets, discarding the livers.
  2. Pour turkey drippings into a bowl and let the fat separate. Skim off most of the fat.
  3. In a saucepan, whisk together 1 cup of drippings and ½ cup flour until a smooth paste forms. Add more flour if needed.

  5. Cook the flour mixture over heat, whisking constantly, until it browns to create a roux.
  6. Add 4 cups of broth and 1 additional cup of drippings. Whisk for 5-8 minutes until thickened.
  7. Add the diced giblets.
  8. Adjust gravy consistency. Thicken by cooking longer or using a cornstarch slurry. Thin with giblet broth or drippings.
